Apple Cinnamon Rolls

2 1/4 c all-purpose flour
1 c milk
1/4 c vegetable oil
1/4 c organic evaporated cane juice sugar (or regular white granulated sugar)
1/4 tsp of salt
1/4 tsp aluminum-free baking powder
1/4 tsp baking soda
1/2 packet of active yeast

1 medium apples, chopped into small cubes (about 1 cups chopped)
1/2 c brown sugar, packed
3 tbsp ground cinnamon
4 tbsp of butter, melted

1/2 c butter, melted (1 stick)
1 1/3 c of powdered sugar
1/2 tsp salt
1/2 tsp pure maple extract (or pure vanilla extract)
2 tbsp milk

1. Heat the milk, oil and cane sugar for 5-8 minutes (do not boil). Pour milk into a large mixing bowl and let it reach lukewarm temperatures.

2. Once milk is lukewarm, sprinkle packet of yeast on top and let it set for one minute. After a minute has passed, pour in flour and mix until incorporated nicely. Cover bowl with a clean kitchen towel and let dough rise for one hour in a warm area.

3. After one hour, mix in the baking soda, baking powder, and salt.

4. For the filling, mix together the cinnamon, brown sugar, vanilla, nutmeg.

5. Place dough onto a well floured surface and begin to roll it into a thin, long rectangle. Melt the butter and brush it onto the rolled out dough, then sprinkle on filling mixture. Follow with apple slices. Roll up the dough, and cut into strips.

6. Place in the oven at 375 degrees Fahrenheit.

7. Bake for 18-20 minutes, or until lightly golden.

8. For the frosting, melt butter and pour into a medium bowl. Mix in powdered sugar, salt, milk and maple extract until smooth.

9. Pour frosting evenly over cinnamon rolls.
