Seared Citrus Glazed Salmon


Fresh seafood and vegetables are a constant dinner staple for me. Last night I prepared a citrus glazed salmon with green beans.

4 (6 oz) salmon filet, Skin removed
EVOO for brushing fish
1/2 c dry white wine
1/2 c balsamic vinegar
2 tbsp orange juice
2 tsp lemon juice
2 tbsp brown sugar
1 pound green beans, trimmed

1. Preheat a cast iron pan or skillet over medium/high heat. Brush EVOO on filest and season with salt and pepper. Cook salmon for 3 minutes on each side
2. While the salmon is cooking, bring the wine, vinegar, citrus juices and brown sugar to a boil over high heat. Reduce the glaze until thickened. 
3. In another skillet, bring 1/2 inch of water to a bail and place green beans in. cover and cook for 4 minutes. Drain beans and toss with a drizzle of EVOO, salt and pepper.
4. Pour glaze over salmon fillets and serve with green beans!
