Some days we need a quick, easy and efficient way to cook green beans (and other vegetables). I adore this recipe because it eliminates the fuss of time, cost and energy without skimping on flavor or texture!
12 ounces trimmed green beans
1/4 cup chicken stock or vegetable stock
1 tablespoon butter or olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1. Heat a skillet with 1 tbsp of olive oil. Add green beans and saute for 3 minutes.
2. Pour in 1/4 cup of stock and bring the mix to a boil. As soon as the mix boils, cover pan and cook for 3 minutes.
3. Uncover and stir in the butter. Cook for 1 minute till the remaining stock evaporates and beans are crisp/tender.
4. Finish by sprinkling the beans with salt and pepper.
